Healthy breakfast: Cheesecake with granola and kiwi. “Breakfast is the most important meal of the day”, we’ve heard this phrase at least a couple of hundred times… but it is indeed true! Breakfast is thé meal you should not miss. In each of the following weeks, we’ll present you a healthy breakfast recipe that we make with our clients during our cooking workshop with Sabine Appelmans. This week we present you: cheesecake!
Cheesecakes are often quite heavy and you may think they are not really suitable for breakfast, but it is possible. This cheesecake is perfect for breakfast thanks to the granolabottom instead of a biscuit base.
Healthy breakfast: Cheesecake with granola and kiwi. For 8 small portions you will need the following ingredients:
For the bottom:
- 200g granola
For the creme:
- 200g cottage cheese 0% fat
- 250g ricotta
- 40g agave syrup
- Zest of 1 lemon
- The juice of half a lemon
- The seeds of a vanilla pod
For the coulis:
- 3 kiwis
- The juice of half a lemon
To finish:
- 3 kiwis, peeled and diced
Preparation:
- Divide the granola over 8 glasses
- Take a bowl and mix the cottage cheese with the ricotta, lemon zest, agave syrup and the vanilla seeds. Spread this mixture over the granola, smoothen the surface and put the glasses in the refrigerator for at least 4 hours.
- Mix the kiwi fruit with the lemon juice until it becomes a fine liquid sauce. Pour some of this sauce in every glass and garnish with some diced kiwi, mixed with lemon juice.
